Personal Trainer Food Ingredients:
¼-½ bag of Pumpkin Seeds
2 cups Baby Spinach
½ Avocado, cut into ½ inch cubes
1 tsp Pumpkin Oil
1 tbsp Peanut Oil
½ Lime, juiced and zested
Salt & pepper, to taste
- In a small bowl, combine pumpkin oil, peanut oil, and lime juice & zest to make the dressing.
- Toss the baby spinach, avocado, and pumpkin seeds together in a salad bowl.
- Add the dressing and mix until evenly coated. Salt and pepper to taste and enjoy!

Amanda has two children under 4, works full time, and is engaged to be married. After having her second child, she constantly struggled getting any weight off and her weight crept up to 197 pounds.
