Personal Trainer Food Ingredients:
1 Lima Beans
Chili pepper, very finely minced
Parsley, finely chopped
White wine vinegar
- Heat Lima Beans in the microwave. Once heated, remove from bag and place in a bowl.
- In a separate bowl, combine the salt, chili pepper, onion, parsley, olive oil and white wine vinegar. Stir until thoroughly mixed.
- Pour the the vinaigrette over the Lima Bean and stir until evenly coated.
- You can let the salad stand for a few hours or serve immediately. Enjoy!

Amanda has two children under 4, works full time, and is engaged to be married. After having her second child, she constantly struggled getting any weight off and her weight crept up to 197 pounds. Before becoming a part of the Personal Trainer Food weight loss team, Amanda was selected and completed the Altered! competition.
