Cilantro Lime Cauliflower ‘Rice’

Cilantro-Lime-Cauliflower-Rice-7-1024x682Personal Trainer Food Ingredients:
1-2 bags of Personal Trainer Food Cauliflower

Additional Ingredients:
Chopped cilantro
Lime, juiced and zested
Butter (optional)

 

Instructions:

  1. Grate cauliflower into a microwave-safe dish.
  2. Cover cauliflower and cook in microwave on high until tender, about 5 minutes or less (time will vary due to wattage difference).
  3. Stir lime zest, lime juice, cilantro, and butter into cooked cauliflower until well blended. Enjoy!
