Personal Trainer Food Ingredients:
4 Mesquite Grilled Chicken Breasts
6 Roma tomatoes, diced (about 2 cups)
2 Garlic cloves, minced
1 tbsp Olive oil
1 tsp Balsamic vinegar
1/4 cup Basil leaves, stacked, rolled and cut into thin slices
1/4 tsp Sea salt
1/8 tsp Black pepper
Optional toppings: feta cheese, parmesan cheese or mozzarella cheese
- Mix all of the bruschetta ingredients together in a medium-sized bowl.
- Heat Mesquite Grilled Chicken in microwave or oven.
- Spoon bruschetta over chicken and top with your favorite cheese.
